Chai or masala chai is basically a spiced milk tea from India. Chai is actually an Indian word literally meaning 'tea'. It is generally made up of rich black tea, heavy milk and a combination of various spices. It has a very warming, soothing effect and acts as a natural digestive aid.
As such there is no fixed recipe for Chai. Most people prepare their own version of it . But , it generally consists of:
1. Tea: The base tea is generally taken to be a strong black tea such as Assam tea.
2. Spices : The traditional Chai contains a spice mixture that uses a base of ground ginger, green cardamom pods, cinnamon, star anise, cloves, etc. Cardamom is normally the dominant note.
3. Milk : Milk and water are added equally and the liquid is heated to full-boiling.
India is the place of Origin for Chai. Historically, Indians viewed tea as a herbal medicine. British East India company was concerened about China's monopoly on tea. Hence, they promoted the idea of tea and started growing tea in Assam. In the early 20th Century, the British-owned associations encouraged the idea of 'tea breaks' and now, chai has established itself as a popular beverage.
